Lots of tomatoes?

This is from "The Healthy Beef Cookbook" and it's been a great sandwich topper!

Tomato Chutney for Beef
1 T. olive oil
1 c. chopped onion
1/4 t. garlic
1/4 c. brown sugar
3 t. balsamic vinegar
2 1/4 c. chopped tomatoes
1 t. basil

Heat oil in skillet and cook garlic and onion until tender.  Add sugar, vinegar and tomatoes, cooking 6-7 minutes, stirring occasionally.  Remove from heat and add basil.  Refrigerate until ready to serve.
