Kombucha - Sioux Falls

I've very happy with my first batch of kombucha. It's a lot easier than I thought it would be! If you're interested in making it, and live in or around Sioux Falls...I can help answer questions.

I just got my scoby in the mail on Saturday and started my first batch the same day. The scoby is floating at the top and appears to be in contact with the air. Do you know if that is a bad thing or not? Thanks,
