Like Mother Like Daughter


Sierra helped in the kitchen by making scrambled eggs and working on the almond bark pretzels we took to a baby shower.  I'll be working on the 10,000 views blog party this afternoon.  Soup's on the menu.  I'm planning to "post" most of the nutrition information we discuss as well as sampled recipes.   

This soup has great flavor as long as you don't substitute the Tuscan Risotto!  There are less expensive versions out there, but they don't have near the flavor!  Oh, and the girls won't be here to help me today - they're shopping with Grandma for yeah, you guessed it, Christmas.

Tuscan Chicken Soup

1 box Lundberg's Tuscan Risotto
¼ c. chopped onion
¼ c. chopped celery
2 large cans chicken broth
1-2 c. diced chicken
¼ c. garbanzo beans

Warm arborio rice from Lundberg's boxed mix in oil of choice along with onions and celery. When browned add in the chicken broth. Cover and cook until rice has softened, then add diced chicken, garbanzo beans and contents of the Lundberg's seasoning packet.
